Call sign is a name that the air traffic use to contact a specific airline. Usually, it would just follow the airline's name. For example, American Airlines is just "American xxx" xxx meaning the flight number. But the airlines below have special call signs:

Canadian north- Empress: someone got the idea when the Canadian Pacific ocean liners were named "Empress of ______"
Presidential airways- washington eagle: white house is in washington, eagle represents america.
Air south(south carolina)- khaki blue: not sure (color of plane?)
Express one international- long horn: not sure (being loud?)
Virgin america- redwood: bases in san francisco, famous for redwoods.
Virgin australia- velocity: the frequent flyer program name.
Tiger air- go cat: tiger is a big cat, this call sign is cheering for tiger.
National air 757s- red rock: not sure(red rock national parks?)
New york air- apple: new york is called big apple.
Chicago express- windy city: chicago is windy(both actual wind and political instability), nick named “windy city”
Usa3000- getaway: not sure
South african airways- springbok: an antelope special to south africa.
Sundt air- midnight: midnight sun is a natural phenomenon in Norway.
Aer lingas- shamrock: logo and aircraft livery both display a shamrock. The shamrock of course is symbolic of the nation of Ireland.
Republic airways- brickyard: reference to the Indianapolis Motor Speedway, which is nicknamed "The Brickyard" do to its partial brick surface.
